- Nacho Cheese Doritos — Not plain corn chips — the real neon orange cheese Doritos. That salt, that fat, and that slightly artificial cheesy taste are exactly what makes this recipe work. Spicy Nacho also works great if you want a kick. Avoid neutral chips; they disappear into the dressing without a trace.
- Ground Beef — Get at least 15% fat, not 5%. With beef that is too lean, you get something dry and characterless. The idea is for a little fat to stay in the pan and caramelize the spices — that’s where the flavor is built. If you prefer something lighter, ground turkey works very well too.
- Catalina Dressing — This is the thing everyone looks at sideways, thinking ‘really?’.
