Processed meat and can.., diabetes, dementia: what the evidence shows

On the cardiovascular side, an American Heart Association news report on the Cardiovascular Health Study found that risk for atherosclerotic cardiovascular disease was 22% higher for about every daily serving of processed meat. Researchers followed older adults for many years and measured blood metabolites alongside diet reports, connecting what people eat with biological markers that can plausibly feed into artery damage.

Processed meat also delivers large amounts of hidden sodium. The U.S. Food and Drug Administration notes that over 70% of dietary sodium comes from packaged and prepared foods — and processed meat sits firmly in that category. The CDC links excess sodium to elevated blood pressure and higher risk of heart disease and stroke, damage that builds quietly over years before showing up as stiffer arteries or cardiac events.

Two servings a week linked to 14% higher dementia risk, new cohort data shows

Brain health research in this area is newer, but findings presented at the Alzheimer’s Association International Conference 2024 added a significant data point. Researchers drew on long-running cohorts — including the Nurses’ Health Study and Health Professionals Follow-up Study — tracking diet for up to 43 years and identifying 11,173 dementia cases.

Their finding: "Eating about two servings per week of processed red meat raises the risk of dementia by 14% compared to those who eat less than approximately three servings a month." That is an association, not a proven causal verdict, yet the scale and duration of the cohorts make it difficult to dismiss.

The Alzheimer’s Association stressed prevention as a priority through Heather M. Snyder, Ph.D., and noted that no single food prevents dementia — overall diet quality is what matters. The dementia signal fits with what cardiometabolic research already suggests: vascular damage, chronic inflammation, and metabolic strain all affect the brain, and diets that raise cardiovascular risk tend to raise cognitive risk as well.

The dementia findings presented at the 2024 Alzheimer’s Association International Conference are expected to feed into ongoing dietary guideline reviews, alongside the established cancer and cardiometabolic evidence. Open questions remain around whether specific curing agents carry different risk profiles, and whether certain preparation methods — such as lower-heat cooking — meaningfully reduce NOC formation. Future cohort updates from the Nurses’ Health Study and Health Professionals Follow-up Study will likely refine the per-serving risk estimates, particularly for cardiovascular outcomes in younger age groups.
